Our History

Our History

The Golden Steer feels like
the soul of Las Vegas.

The Golden Steer is the oldest continually operating steakhouse in Las Vegas and has been serving “The Best Steaks on Earth” TM since 1958. It is filled with history and stories from the famous celebrities who dined there, and the signature red leather booths named in their honor from Frank Sinatra to Marilyn Monroe. If you have ever seen the movie Casino most of the restaurant scenes were based on moments from the Golden Steer, a beloved hangout spot for the Mafioso back in the day.

Today, patrons dine at the Steer to experience fine dining at its most classic core – tuxedoed servers, white tablecloths, Caesar salad tableside, flaming desserts, giant twice baked potatoes, and the most flavorful steak you’ve ever had. As one customer stated, “The Golden Steer feels like the soul of Las Vegas.”

1958

The Western Frontier

In 1958, the Golden Steer emerged as a beloved and traditional frontier establishment. Its walls were adorned with rifles bestowed by cowboys and patrons of yesteryears. Nevada’s mountains and deserts beckoned hunters who, after a successful day, brought their catches to be expertly butchered and prepared by our chefs. Early iterations of the menu from the late 50s and 60s featured items beyond steaks, such as game, rattlesnakes, and turtle soup.

1965

Emerging Headliners

The Golden Steer transformed into the go-to destination for lounge acts, movie stars, and the headliners of the Sands Hotel by 1965. In the late 1960s, the Rat Pack, post-show, would make the Steer their preferred spot for a great steak, winding down with beverages and camaraderie. The corner they commandeered back then is now preserved as the Rat Pack section and stands to this day.

1986

Mob Ties Unveiled

The 1980s ushered in a chapter of mob influence, with Chicago Outfit Enforcer Tony Spilotro establishing the Gold Rush Pawn Shop near the Golden Steer Steakhouse. Tony’s discreet entrances through the existing back door, evading federal eyes, led to dinners with his lawyer, Oscar Goodman. The dining scenes immortalized in “Casino” were, in fact, real-life episodes within our walls.

2001

Legacy Preserved

In 2001, Dr. Michael J. Signorelli, a casino operator and creator of the Mesquite Star Casino, revered the steakhouse’s history and legacy. Acquiring the restaurant, he committed to preserving its heritage, transforming it into a family business. These values now resonate in Amanda Signorelli, his daughter, and her husband, Nick McMillan, who manage the steakhouse today.

2020

Adapting to Change

COVID forced the steakhouse to shutter temporarily, marking the first closure in 65 years. Seizing the moment, our leadership redefined at-home cooking standards with steak boxes, seasoning blends, and compound butters. These offerings, infused with the beloved steakhouse flavors, became a nationwide sensation.

Present Day

A Legacy Continues

The Golden Steer’s iconic history attracts a new generation of celebrities, sports figures, and famous patrons. Celebrating our 65th anniversary, we expanded our walls for the first time in 50 years, taking over our next-door neighbor, and opening the Armory and Gambler’s Den. Simultaneously, we redefined the at-home dining experience through our assortment of chef-crafted pantry products, expanding the legacy outside Nevada.

The Golden Steer Steakhouse is a restaurant where locals meet and families celebrate birthdays, weddings, anniversaries and other special events. The Golden Steer Steakhouse is also known for our many famous and infamous customers such as Tony “The Ant” Spilotro, Natalie Wood, Al Hirt, Nat “King” Cole, Joe DiMaggio, Elvis Presley, and Mario Andretti, just to name a few.
